That the size of your hat shows your rank and standing as a cook-person. Bakers have teeny-tiny flat caps like the above (that's a picture of actual students from my TAFE - I'm gonna have to wear uniform to TAFE x.<) because they're just bakers, while pastry chefs have huge towers on their heads. o.0;

I also read that chefs collect pletes in their hats; one for every way you know how to cook an egg xDD I have no idea how true that is, but it seems just quirky enough to be true.

I wonder if I'll have the learn which kind of hat belongs to what chef xDD

From what I've seen it seems to be the flat cap, an apron and white shirt xDD
